Plant Description: It grows to 40-60 cm with slender stems and alternate, finely divided, softly delicate leaves 10-20 cm long. Leaf divisions are 1-2 mm broad, slightly broader than the similar leaves of fennel, which are thread like, but harder in texture.

Flavor and aroma: The feathery leaves resemble fennel but its flavor is quite distinct. Dill has a mild and warm flavor. The aroma is faint, almost similar to the scent of aniseed. The herb, especially when fresh, has a much sweeter fragrance than its dried fruits. Dill leaves have a wonderful aroma.

Dehydration: Hot air drying.

Uses of dill
